Back in 2010, way before the current keto craze, I added A LOT more saturated fat into my diet. I had previously bought into the theory that saturated fat and red meat were harmful. I rarely ate red meat and instead are fake, soy based “meat” substitutes. I also consumed Smart Balance, a product full of rancid, industrial processed oils, instead of butter. Reading Nourishing Traditions blew my mind and changed my way of thinking.
My health is so much better and I know adding generous amounts of saturated fat helped heal my gut and recover from Lyme and co-infections. My cholesterol is also lower.
